INGREDIENTS
• 3 romaine lettuce hearts - halved lengthwise
• 2 tablespoons olive oil
• 4 teaspoons water
• 2 teaspoons light brown sugar
• 2 teaspoons fresh lime juice
• 2 teaspoons fish sauce
• 1/4 teaspoon minced garlic
• 1/8 teaspoon crushed red pepper
• 1 ounce feta cheese, crumbled (about 1/4 cup)
• 1/4 cup chopped cilantro
DIRECTIONS
1. Preheat grill to approximately 450°F.
2. Dust romaine halves evenly with olive oil. Set lettuce down, cut sides, on grates. Then grill each side for 1 minute and 30 seconds. Turn lettuce until lightly charred.
3. Set the lettuce on a platter. Mix together 4 tsp water and the next 5 ingredients (though red pepper) in a small bowl until sugar is completely dissolved. Drizzle mixture over lettuce. Finish off with cheese and cilantro.
